Job Title: Executive Pastry Chef Location: Cooperstown, NY Salary Range: $80,000 – $95,000 annually Reports To: Executive Chef & Executive Sous Chef Department: Culinary JOB SUMMARY: The Executive Pastry Chef oversees all pastry and baking operations, including the Artisan Bread program, and acts as the kitchen manager in the absence of the Executive Chef and Executive Sous Chef. This role involves planning production, developing seasonal offerings, and ensuring compliance with NY health department codes and company conduct standards. Collaboration, leadership, and cleanliness are key to maintaining a productive and creative kitchen environment. ESSENTIAL FUNCTIONS: Maintain sanitation, health, and safety standards in all work areas. Demonstrate strong baking and pastry skills while managing food costs. Supervise and coordinate pastry and bakery preparation and presentation. Plan daily production to meet operational needs. Grow and innovate the Artisan Bread Program with seasonal offerings. Ensure consistent high quality across dessert and bakery items. Conduct monthly inventory; monitor portion control, waste, and sanitation compliance. Ensure food is prepared to spec and buffets are set up on time. Communicate effectively with all food & beverage departments and follow BEO instructions. Review and update recipes; create seasonal menus with creativity. Multi-task between baking, staff training, and banquet production. Establish standardized recipe formulas for consistency. Build team morale through leadership and feedback. Lead seasonal menu changes for all a la carte operations, including The Market Place. ADDITIONAL DUTIES & RESPONSIBILITIES: Must be available to work early mornings, evenings, weekends, and holidays. Maintain certification in sanitation and workplace safety. Practice safe food handling, preparation, and cooking procedures. Develop kitchen opening and closing procedures. Thrive in a high-volume environment with strong multitasking skills. Perform under pressure while maintaining quality and safety standards. Uphold high personal hygiene and grooming standards. Apply workplace safety practices consistently. Monitor and control kitchen staff hours to manage overtime and ensure adherence to scheduled shifts. Lift and carry up to 50 lbs to shoulder height (e.g., flour bags for bakery storage bins). Work Environment: This is an on-site leadership role within a luxury hospitality setting. The Executive Pastry Chef will collaborate daily with the General Manager and other department heads to ensure seamless operations and top-tier guest experiences. The position involves a mix of strategic planning and hands-on execution in a fast-paced, guest-focused environment.
